I usually buy textbooks used on here. Love that amazon is during book rentals now. Best thing ever! I guess its in great condition cause amazon just started this thing, & the books havent been used yet, or what. This book is pretty helpful, honestly, more helpful than the teacher i had. Well written & detailed. Might end up buying for future reference.- Culinary MajorAlso, i highly recommend college students rent books from Amazon. Renting books on here seems to be cheaper than all those other textbook rental sites & mostly definitely cheaper buying it new or used on here than it is in the school bookstore. I know for a fact that ill get more money back from financial aid, if i rent/buy my textbooks on Amazon.Love this!

It is, by far, the most complete docuementation of Food Service purchasing I have read in my 40 years of experience. This book should be close at hand for evryone involved with Food Service procurement.
An in depth book covering a wide array of issues regarding purchasing. I would recommend it as a staple in a working chefs library for reference and to help train staff in the proper procedures for food procurement and care after receipt. Great photos for product identification.Worth every penny!
This book is riddled with factual errors. The author needed a proof reader and the publisher needed a proper editor. The book was too expensive to have so many problems with it.
